Recipe: Easy Golden Cornbread

Cornbread makes everything better.  This is my easy go-to recipe that's adapted from the Bob's Red Mill cornmeal package.  It's easy enough to whip together at the last minute.  It's also a great recipe to get your little ones to help with. Especially if they love mixing. Don't they all love mixing?



What you'll need:

3/4 cup medium grind cornmeal
1 1/4 cup whole wheat or white flour
1 tablespoon baking powder
1/2 teaspoon salt
1 tablespoon sugar
1 egg
1 cup 2% milk
1/4 cup margarine (or butter)

Directions:

1.  Combine dry ingredients in mixing bowl.

2.  Add egg, milk and margarine and mix until smooth (for about a minute, don't over mix).

3.  Bake for 20 - 25 minutes in a greased 8" square pan.

4.  Serve it warm.  It's so good warm.


Verdict:

Yeah, this is a winner.  It's a staple in our house.  I like to make extra and warm up the leftovers and serve it with jam or honey for breakfast.  It's also a highly adaptable recipe.  You can add charred corn kernels, jalapeño or sharp cheddar to the batter to great effect.

    Gavin is not much of a mixer, but you won't find anyone better at or happier to break eggs if needed.

  2. She always wants to break the eggs, but I get her to do it in a little bowl so I can pick out all the bits of shell...
